Cooler Air Egg Gribiche with Asparagus

Ingredients
- 8 cornichons
- 1/2 cup olive oil
- 2 1/2 tablespoons champagne vinegar
- 1 1/2 tablespoon drained capers
- 1 tablespoon whole grain mustard
- 1/2 teaspoon Kosher salt
- Pinch of freshly ground pepper
- 4 Hard-Boiled Eggs, coarsely chopped
- 2 tablespoons chopped tarragon and Italian parsley
- 1 lb grilled asparagus
Directions
Coarsely chop the cornichons and capers. Whisk cornichons, capers, olive oil, vinegar and mustard in a small bowl to emulsify; season with salt and pepper. Gently mix eggs and herbs into dressing. Adjust seasoning if needed.
Cover and chill for an hour. Bring to room temperature before serving over grilled asparagus.
