Ingredients
- 6 large eggs
- 2 tbsp extra virgin olive oil
- Pinch of kosher salt or sea salt
- Toppings: fresh chopped herbs
Directions
Whisk eggs together in a small bowl, then season with salt. Place a skillet over medium heat for 1-2 minutes. Add olive oil and continue heating until oil begins to simmer. Pour in egg mixture.
Using a non-stick spatula, gently fold the eggs to ensure even cooking. Cook for 1-2 minutes. Remove from heat.
Serve with toppings.
